It’s Thanksgiving and you look around your camper and think, “What am I going to cook in that small oven and what are some good recipes that are easy to fix and I can make ahead?”
Here’s three recipes that might encourage you to try something a little different from the foods you normally have for Thanksgiving. If these don't excite you, be sure to browse the internet for a plethora of mouthwatering, easy-to-make sides and main meals.
Cranberry, Spinach & Toasted Almond Salad
Dressing
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil
Almonds
1 tablespoon butter
3/4 cup almonds blanched and slivered
The Salad
1-pound fresh spinach
1 cup dried cranberries

INSTRUCTIONS
In sealable jar, add sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil-then shake vigorously till combined. Refrigerate up to 2 days.
In small skillet, melt butter over medium heat; add almonds and stir until lightly toasted. Remove from heat and let cool.
Toss the salad. Just before serving, in a large bowl, toss spinach, toasted almonds, cranberries and dressing.
Another favorite at the meal of plenty is acorn squash or butternut squash. Acorn squash loves to be stuffed and butternut squash is perfect if chopped and roasted then mixed with sausage that you’ve added poultry seasoning and thyme, onions, garlic, dry bread cubes and a little chicken broth. Spoon everything into a buttered Dutch oven at 350° until heated through. Use your own seasoning that you and your family like the best. And you have an excellent side for your dinner or potluck.
Mashed potatoes with a twist
Peal and dice your potatoes (however many you need for two or a potluck)
1 – 4 sweet potatoes diced (optional)
Add 1 to 4 stalks of diced celery
Add 1 – 4 cloves of garlic
Add 1 – 3 bay leaves
½ - 2 tablespoons salt
To mash – remove bay leaves, drain, mash with hand masher or electric mixer. Add ¼ to 1½ cup butter, milk or cream or sour cream – continue mashing.
